Calzones

















These were so easy and so good!  My friend Andrea gave me this recipe back in 2006, I think.  Tonight was the first night I actually remembered to make them :)  I used two loaves of bread thinking that I wanted leftovers and not knowing how much Aaron would eat.  If you can tell from the picture, one was the size of our dinner plates.  So we definitely have plenty of leftovers :)  If you only want this for one night, one calzone was plenty for two people, in my opinion.


Recipe (adapted slightly)


- 2 loaves of frozen bread (I used Rhodes)
- 1/2 green pepper, diced
- 1/2 onion, diced
- small can black olives, chopped
- 6 thin slices of salami
- shredded, mozzarella cheese
- pizza sauce
- olive oil
- minced garlic


Preheat oven to 325 degrees.


Stretch the loaves into two, ovalish shapes (make sure to flour your surfaces well).  Brush olive oil onto the dough and sprinkle with minced garlic.  Spread pizza sauce onto dough.  Place remainder of ingredients in middle of dough (salami, green pepper, onion, olives, cheese).  Cut 1 inch strips on both sides of dough.  Fold in and braid the two sides of the dough.


Place each calzone on cookie sheet.  Cook at 325 degrees for 25-30 minutes.

Weekend Recap

What a whirlwind!  Friday I got up bright and early at 4:30am to travel to Chicago for work.  Come to find out after I had already made it halfway to the airport, our plane was delayed an hour.  Lovely.  The meetings went well and wrapped up around 4pm Chicago time.  We headed back to the airport and I pulled into our driveway at about 10pm.  I was exhausted to say the least.  I put on my PJs, washed my face, gave Aaron and kiss, and went to bed.

Saturday was day 1 of spring cleaning.  I hate spring cleaning.  But I know I need to do it so I decided Saturday was as good of a day as any other.  I tackled the kitchen and the dining room.  The only thing left is the inside of the oven, but Aaron has agreed to help with that since the cleaning fumes probably aren't the best thing for me to be breathing in.  At night, we went to a space downtown Aaron's firm had been working on.  After the lecture, we went to our friends' Amy and Jamie's to celebrate the kickoff of Amy's b-day week.  We had so much fun catching up, eating, and drinking (water for me).


Yes, I have OCD...and have a list.


Sunday we were able to enjoy brunch with a few of Aaron's old and current coworkers.  The food was amazing!  I will definitely be making Matt's breakfast pizza at some point.  It was nice catching up and hearing all of the baby updates from friends. 

We got home late afternoon and it as time to tackle the bathroom.  Aaron did yard work and grocery shopped for me.  And we decided to treat ourselves to Mitchell's for dinner.






As always, it went by way too fast.  Next weekend, we have my youngest SIL's graduation from UofM on Saturday followed by a family dinner celebration.  I also hope to get to the living room for spring cleaning...one room at a time right?

Weekend Recap

It's hard to believe the weekend is over already!  They always seem to go by way too fast.  We had so much fun though.

Friday we went to Rosie's in Ferndale, and then watched Hangover 2.  While some parts were a little over the top, it was pretty funny :)

Saturday was a day full of cleaning and errands.  We went to a friend's house for a wine tasting party at night, so I spent the afternoon getting some food ready.  We had so much fun!  And bought way too much wine :)  The guy was a little pushy for our taste, but I guess this is how he makes his living.



I made caprese salad bites and these little chocolate covered grapes. SO good!  Both were a huge hit.  I was hoping for some leftover grapes, but unfortunately, they were all gone.  Oh well, I guess that means everyone loved them :)  Here's the recipe, SUPER easy.

Chocolate Covered Grapes

-Red or green grapes (seedless)
-1 cup white chocolate chips
-1 tablespoon crisco
-Chopped peanuts

Melt chocolate and crisco on the stove (make sure to use the double pan with boiling water in one, and then the chocolate and crisco in the other so as not to burn the chocolate).  Dip grapes in chocolate and then in the peanuts.  Place on wax paper to cool.  Refrigerate once chocolate is set.

Caprese Salad Bites

-2 pints cherry/grape tomatoes
-Fresh mozzarella
-Fresh basil
-salt and pepper
-Olive oil
-Balsamic vinegar

On each toothpick, place one tomato, a piece of basil, and a piece of mozzarella.  Once in the dish you'll be using, sprinkle with olive oil, balsamic vinegar, and salt and pepper.


And the aftermath...The tasting started at 4pm.  We decided to go to a local bar after.  We called it a night at about 11:30pm.  Us old folks just can't handle drinking early and staying out late anymore.
